I channeled Betty Crocker this weekend.

It was a perfect weekend to do so. It's finally not hot here in So Cal, and it's holiday time! I finally feel ready to dive into the holidays.

So...I made homemade Kit Kat bars! I found the recipe in Cooking with Paula Deen (which I bought for the first time. Not sure I would again...but anyways). It looked easy and delish. And it's a no-bake recipe, which is helpful, seeing as how my oven's knob came off and while the oven turns on, theres no way to tell what temperature it's at. Fun times.

Anyways....these are amazing!

Homemade Kit Kat Bars

75 club crackers
1 cup butter
2 cups graham cracker crumbs
1 cup firmly packed brown sugar
1/2 cup whole milk
1/3 cup white sugar
2/3 cup creamy peanut butter
1/2 cup semi-sweet chocolate chips
1/2 cup butterscotch chips

Line an ungreased 13x9 inch baking pan with 1 layer of crackers, cutting to fit; set aside.

In a large saucepan, melt butter over medium heat. Add cracker crumbs, brown sugar, milk, and sugar. Bring to a boil and boil for 5 minutes, stirring constantly. Remove from heat and pour half of the butter mixture evenly over crackers. Place another single layer of crackers evenly over butter mixture. Pour remaining butter mixture evenly over crackers. Top evenly with remaining crackers.

In a small saucepan, combine peanut butter, chocolate and butterscotch chips. Melt over medium low heat, stirring constantly. Spread evenly over crackers. Cover and chill for at least 1 hour. Cut into bars and store into refrigerator.
My two cents: Definitely get your crackers situated before you make the filling! Yeah. I didn't use peanut butter - I don't know where you get your Kit Kats, but mine don't have peanut butter in them. Don't wear your favorite sweater. You basically make a candy mixture and it boils up and sputters hot caramely bits at you. They are soooo good, but very rich (hello, it's a Paula recipe!)
