I wish I was the type of blogger who was super organized. I love love love the amazing blogs I read that actually help you...like, oh, it's the week before Easter, here are some great recipes and ideas for ya!
Not me, no sir.
I will post my Easter recipe a week after the holiday.
{to get you ready for next year! yep. that's it.}
No seriously though you guys. This one is good enough to make anytime. As long as you are a meat eater and like good food.
{meat!}
Cherry Coke Ham {adapted from Nigella Lawson, that goddess!}
1 bone-in ham {mine was gigantic. almost 9 pounds. but the recipe first called for a 4 pounder. ha}
1 onion, peeled, cut in half
1 2 liter bottle of Cherry Coke {or go classic with regular Coke}
In a large pot or Dutch oven, place the ham and the onion and pour the Coke on top. Over medium-high heat, allow the Coke to come to a boil. Reduce heat to medium low and cover, not tightly, and cook, 1 hour for every 2 pounds. You do the math.
When the time is almost up, preheat oven to 500. Pull the ham from the pot and allow to rest. With a knife, remove any fat. Place in a roasting pan.
I went rogue and made my own version of her glaze.
3/4 cup brown sugar
2 tablespoons dijon mustard.
Combine and smear over the ham. Place in the oven for 10 minutes, until glaze is burnished and bubbly.
Holy moly. On Easter Sunday, B, my mom and I basically just stood around the pan, grabbing little glaze-y bites. It's so good.
Happy Easter {next year}!

What I love is the fact that you got me here via a tweet with a Napoleon Dynamite reference - coolest. ever. And I'm not the biggest ham fan, but this sounds gooooood.
Happy Easter next year! ;)
