a pinterest win

So far, the recipes I have found off Pinterest have been hit or miss.
They all look amazeballs, that is for sure.
But looks can be deceiving.
{i almost felt heartbroken the time i clicked in a gorgeous photo of a cake and the recipe was entirely a box mix and canned frosting. um. really?}

Anyways. Moving on.
This recipe really really delivered.
I made it for Mother's Day and it was so delish.


Maple Mustard Chicken {full recipe credit goes to Witty in the City}

Boneless skinless chicken thighs {I used a pack of 6}
1/2 cup dijon mustard
1/4 cup real maple syrup
1 tablespoon rice wine vinegar
fresh herbs {rosemary or tarragon, I used tarragon}

Preheat your oven to 450. Yep, hot. Mix together the mustard, syrup and vinegar and put your chicken in a oven proof baking dish. Slather them with the sauce so they are fully coated, both sides.

Pop them in the oven for 40 minutes, basting about halfway through with the sauce in the pan. Let the chicken rest for 5 minutes and then plate it, making sure to drizzle with extra sauce. Sprinkle with the fresh herbs and you are done!

Does it taste maple-y? No.
Does it taste mustard-y? No.
It's just really good, a hint of sweet, almost an Asian flavor.

So easy and seriously so good.
