Locked

a recipe for my 600th post.

This is my 600th post, yo. Whew. 

Anyways, for the past two weeks I have been 100% committed to a..um..don't want to use the word diet...meal plan? concocted by my amazing sister. Long story short, I have lost 15 pounds and I am still doing it. I will post more about my goals and why and all, but for now, I have something you should make for dinner that is super good {and healthy: low fat and under 500 calories}

It's a non-recipe recipe, because you can really use what you have. I knew what calories I wanted to 'spend' and measured accordingly. I had a Mexican food craving and this completely satisfied it.

Mexican Pizza {eh, it's kinda more like a tostada}

Whole wheat tortilla {I used a Trader Joes Whole Wheat & Flaxseed tortilla}
Fat free refried beans or black beans
Ground turkey, browned in a frying pan with a spray of cooking spray {I also used half a packet of Trader Joes taco seasoning. it's so spicy fyi!}
low-fat or reduced fat shredded cheddar
lettuce, tomato, cilantro
salsa and non-fat Greek yogurt {the same as sour cream, I swear}

Preheat oven to 400 degrees. I toasted  my tortilla on the oven rack, flipping it every few minutes. I knew I wanted it to be crunchy.

And then..the fun part. A layer of beans, a layer of turkey, a sprinkle of cheese, and back in the oven for the cheese to melt. 5 minutes later, I covered it with lettuce and tomato and liberal amounts of my favorite herb, cilantro. A dollop of Greek yogurt was the finishing touch.

Guys, this was GOOD and I was FULL. Two very important things in my book.

So yeah, this is a healthy recipe from the girl who loves cupcakes and cheese and salted caramel. Huh.

I'm all about the healthy recipes. I am on a DIET--no two ways about it--and recording everything I eat in myfitnesspal. It's annoying but it totally works. I'm also trying to alternate running & the 30 Day Shred. Ugh. I can't believe you've lost 15 pounds in TWO WEEKS--that is amazing!!!!! Eager to hear more about your progress--and more recipes, please!
